Basic Muffins

  • 1/4 cup oil
  • 1 large egg
  • 1 cup milk, buttermilk or half-and-half
  • 1/2 cup sugar (1/4 cup for savory or less sweet muffins)
  • 1/2 teaspoon salt
  • 1 tablespoon baking powder
  • 2 cups flour


Preheat oven to 400°F.
Combine first five ingredients in a large bowl and mix well. Add the baking powder and flour. Stir until just combined. Add additions (see below) and stir just to combine – be careful not to over mix.
Spray a muffin tin liberally with pan spray and spoon in batter, filling 3/4 of each cup. Bake preheated oven until slightly browned on top (cooking times will vary depending on any additions).
Allow to cool five minutes before removing.
This basic muffin is great served warm with jam or honey, or with cheese as a little snack.
Alterations can include using some or all whole-wheat flour, using 1 cup cornmeal to replace 1 cup of flour, 1/2 cup wheat bran to replace 1/2 cup flour or using other grain flours as desired. You can also add up to 1 cup cooked cereal or grain to the finished recipe (this will make more than 12 muffins).
Additions can include cocoa powder, chocolate chips, vanilla, cinnamon, dried fruit, nuts, seeds, herbs, cheese crumbled bacon, cooked sausage and chopped vegetables.
