Baked Sea Bass with Roma Tomatoes

  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 pound sea bass, cubed into 2-inch cubes
  • 1 pound mushrooms of your choice, sliced
  • 1/2 cup soy sauce
  • 5 Roma tomatoes, chopped
  • 1/2 cup grated Parmesan cheese


Preheat oven to 350°F. In a large skillet over medium-high heat, sauté garlic in oil. Add mushrooms and sauté until lightly browned. Add sea bass and soy sauce and sauté about five minutes. Drain off liquid and place fish and mushrooms in a greased baking dish. Top with tomatoes and cheese. Bake for 10-15 minutes or until tomatoes are heated through and cheese is bubbly.
This recipe works well with most white-flesh fish, including halibut, true cod and rockfish.
