Baked Nian Gao (Chinese New Year Cake)

  • 4 1/2 cups glutinous rice flour
  • 3/4 cup vegetable oil
  • 3 large eggs
  • 2 1/2 cups whole milk
  • 3/4 cup sugar
  • 3/4 cup light brown sugar (gently packed)
  • 1 tablespoon baking soda
  • 1 3/4 cups mashed sweetened red azuki beans


Preheat oven to 350°F.
Grease a 9x9-inch baking pan.
Combine rice flour, oil, eggs, milk, sugars and baking soda in a large mixing bowl.
Using an electric hand mixer or stand mixer, beat on medium speed until well combined, about 2 minutes.
Increase speed to high and beat for 2 minutes longer.
Spread half of batter into prepared pan.
Bake for about 10 minutes, or until just starting to set.
Remove from oven.
Drop mashed beans over top in spoonfuls.
Drag spoon through to gently spread (do not stir and do not worry about spreading beans in an even layer).
Pour remaining cake batter over top.
Bake for 30-40 minutes, or until a toothpick inserted in center comes out clean.
Cool before serving.
