Bacon Cheeseburger Soup

  • 1 tablespoon ghee or lard
  • 1 yellow onion, diced
  • 1 clove garlic, minced
  • 1 pound ground beef
  • 2 cups beef stock
  • 1 (14.5-oz) can diced tomatoes
  • 1/2 cup sliced dill pickles
  • 1/2 cup full-fat sour cream
  • 1 cup grated cheddar cheese
  • 1 tablespoon chopped parsley
  • 1/2 cup heavy whipping cream
  • 3 egg yolks
  • Salt and Pepper
  • Cooked bacon, to garnish


Add the ghee or lard to a large soup pot on medium heat. Add onion and garlic and cook until fragrant, 3-5 minutes. Add ground beef and cook a few minutes until browned. Pour in stock and add diced tomatoes. Bring to a boil. Add sour cream, cheese and parsley. Mix well.

Reduce heat to medium low. Whisk the cream with the egg yolks in a separate bowl, and then slowly add the mixture to the soup while stirring. Cook for another minute. Remove from heat. Season with salt and pepper and top with more parsley, cheese and cooked bacon.
