Sweet Potato and Yukon Gold Gratin

  • 1 1/2 pounds sweet potatoes, peeled and thinly sliced
  • 1 1/2 pounds Yukon Gold potatoes, thinly sliced
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 cup heavy cream
  • 1 cup whole milk
  • 1 cup grated Gruyere cheese
  • 1/2 cup fresh breadcrumbs, combined with 2 tablespoons melted butter
  • 1/2 cup finely chopped walnuts


Preheat oven to 350°F.
In a saucepan, combine all potatoes, cream and milk. Simmer for 5 minutes or until slightly softened.
Stir in cheese.
Pour into a greased baking dish.
Bake until potatoes are very tender and sauce is thickened, about 1 hour.
Top with breadcrumbs and walnuts.
Bake for 5-10 minutes more, or until browned.
