Sautéed Kale with Parmesan Cheese and Tomatoes

  • 2 bunches kale, washed, stems removed and roughly chopped
  • 2 tablespoons olive oil
  • 3 garlic cloves, thinly sliced
  • 4 tomatoes, seeded and diced
  • 1/2 cup freshly grated Parmesan cheese
  • Pinch sugar
  • Salt and black pepper to taste


Heat oil in a large skillet over moderate heat.
Add kale and increase heat to high. Stir until nearly evenly wilted, about 2 minutes.
Add garlic and cook for 2 minutes more. Add water if kale is very dry.
Add salt, pepper and tomatoes. Cook for 1 minute.
Stir in Parmesan and sugar.
Remove from heat, taste and adjust seasonings.
If cooking in batches, repeat as needed. Serve immediately.
