Ingredients

  • 4 eggs, plus 2 egg whites
  • 2 tablespoons skim milk
  • 1/4 teaspoon salt
  • 1/2 cup bottled salsa
  • 1/2 cup black beans, rinsed and drained
  • 4 (8 inch) whole wheat tortillas
  • 1/4 cup fat-free sour cream
  • 2 tablespoons chopped cilantro

Directions

In a small bowl, whisk together eggs, milk and salt.
Heat black beans and salsa in a small saucepan or in microwave.
Spray a small, non-stick skillet with cooking spray.
Cook eggs to desired doneness over medium-high heat.
Lay tortillas on a work surface and top with eggs, black bean mixture, sour cream and cilantro.
Roll up and serve.
