Israeli Couscous and Blueberry Salad

Ingredients

  • 3 cups raw Israeli couscous
  • 1/2 cup toasted pine nuts
  • 2 stalks celery, diced
  • 1/2 cup red onion, diced
  • 2 cups blueberries
  • Zest of 1 orange, diced
  • 1 tablespoon finely chopped mint
  • Dressing:
  • 1/4 cup orange juice
  • 1 tablespoon chopped mint
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 cup red wine vinegar
  • 1/2 cup olive oil

Directions

Bring 6 cups of water to a boil.
Stir in couscous, reduce heat and cover. Simmer for 10 minutes.
Drain if needed and cool thoroughly.
Combine dressing ingredients in a food processor or blender until creamy.
Mix all ingredients together in a large bowl. Adjust seasoning to taste with salt and pepper.
