Basic Rub for Meat

Ingredients

+ Add to Shopping List
  • 3 tablespoons smoked, hot or sweet paprika
  • 3 tablespoons brown or white sugar
  • 3 tablespoons kosher salt
  • 1 1/2 tablespoons black pepper
  • Additions (choose one or several, but not all at once!):
  • 1/2 tablespoon garlic or onion powder (or replace salt with onion or garlic salt)
  • 1 tablespoon mild chile powder
  • 2 teaspoons white pepper
  • 2 teaspoons cayenne
  • 1 tablespoon dry herbs (thyme, oregano, basil, sage)
  • 1 teaspoon allspice
  • 2 teaspoons cocoa powder
  • 1 tablespoon tea leaves or instant coffee
  • 1 tablespoon onion or garlic flakes

Directions

Combine all ingredients, mixing well.
Rub meat liberally and let rest before cooking.
